I felt like making something from Short and Sweet. I didn't want to go to the shops to buy any ingredients, so I leafed through until I found a recipe for which I could, at a pinch, assemble the ingredients. Step up, Banana Bran Muffins. They contain enormous quantities of bran (I only had toasted soya bran, but it seemed to work - and no, I'm not sure why I had it either), a goodly amount of banana and only a smidge of butter. Result. The recipe made 24 in the end, so I was giving them away left, right and centre, and can only imagine that they had the same encouraging effect on the recipients as they did on us. They were super delicious, very moist, not too sweet and the bran was undetectable at the point of consumption.
